Happy Monday! What better way to start out the week than with a delicious muffin recipe?
These muffins are great for two reasons: fresh strawberries and greek yogurt! Â I realize now that this is the third recipe in a row I’ve posted that includes these two ingredients (don’t forget about those cupcakes and popsicles!), but can you even blame me? Try them out for yourself!
Strawberry Lemonade Muffins
Recipe adapted from Southern Living
- 2 1/2 C self rising flour*
- 1 C Sugar
- 1 C plain Greek Yogurt
- 1/2 C butter, melted
- 1 Tbs lemon zest
- 1/4 C lemon juice
- 2 eggs
- 1 1/2 C diced fresh strawberries
Combine flour and sugar in a bowl. In a separate bowl, mix the yogurt, butter, lemon zest, lemon juice and eggs. Add to flour mixture and stir until just mixed. Gently fold in strawberries. Spoon batter into muffin pans 2/3 full. Sprinkle sugar over batter (I didn’t do it, but I think turbinado sugar would be great.)
Bake at 400F for 16-18 minutes or until a toothpick stuck in the center comes out clean. Cool the muffins in the pan for 1 minute, remove from pans and cool for 10 more minutes on a wire rack.
*don’t have self-rising flour? add a heaping tablespoon of basking powder and 3/4 tsp salt to 2 1/2 C of regular flour and you’ll be good to go.
