Of course I buy some produce all year round, but once the temperature starts to rise I find my fridge is constantly stocked with fresh cut fruit and veggies. I made this pico for chip dipping and taco topping this past weekend. It was too tasty not to share!

This is way healthier than dipping those tortilla chips in a cheese sauce and its so much prettier! Look at that color palette! The only other ingredients needed are some minced garlic and salt to taste. Be sure to make this the day you plan on serving it as it can get kind of soupy when it sits.

Yeah, I’m watching Grey’s Anatomy on Netflix. I was really into that show for seasons 2.5-6, but I had never seen the very beginning and now I’ve been sucked back into it. Many Thursday nights from undergrad are coming back to me, and as a result, no picture of chopped cilantro. That show is still on, can you believe it? Grey’s, anyone?

Pico de Gallo

  • 4 tomatoes, diced
  • 2 jalepeno peppers, diced (remove some seeds if you don’t want it too spicy)
  • 1/2 red onion, diced
  • 1/4 bunch cilantro, chopped
  • 1-2 tbs lime juice
  • 1-2 tsp minced garlic
  • salt to taste

Mix all chopped ingredients into a bowl. Stir in lime juice, garlic, and salt.

Serve with tortilla chips or as a taco topping. Store any extra covered in the fridge.
