There’s something about Mondays and my need to add an ‘m’ descriptor to them. While it’s Music Monday here in blogland, in dinner land it is Meatless Monday. Sometimes there’s other meatless nights, but I like to stick to Mondays because face it, Meatless Wednesday just doesn’t quite have the same ring to it.

I found the recipe over at the pioneer woman. I’m not going to write out the entire recipe because I basically just followed hers and she did such a great job posting it. I’ll show you my pics, tell you what I did differently and make you want to make it for your own meatless Monday meal.

My veggies varied from hers only because of what I had on hand. I also didn’t use as many; this recipe makes a ton, so its ok if you skip out on a few of the veggies.

cook the veggiespasta primavera sauceFor the sauce I used chicken broth, half and half, basil, pepper, and parmesan cheese. She substituted white wine for half of the chicken broth, but I didn’t have any (it was all in the sangria, I suppose) and heavy cream for half of the half and half.  pasta primavera recipe

And there you have it! This made so much food we probably could have had “Meatless month of May” with it. But it was sure tasty!
