Quick yet tasty Chicken Quesadillas

Work has been a little demanding these past couple weeks, so the only thing I’ve really had time to make is dinner. After working all day on Saturday, the last thing I wanted to do was make a super involved meal, but I was actually pleased enough with this meal that I decided to post it.

But first, a quick background story:

Earlier in the week, Brandon’s firm had their annual Chili Cook-off where the different groups within the firm team up and make various fall dishes and chili. They each have a theme and compete for best theme, costumes, and, of course, chili. It seems that whenever Brandon volunteers to bring in food, that means I’m making food. Too bad I didn’t have this blog back in March when I made a pretty awesome Shepard’s pie for St. Patrick’s Day. Maybe I’ll reenact it for you sometime…it was prize winning!

Anyway, this time he volunteered to bring in various chili toppings. Tomatoes, cilantro, jalapenos, green onion, sour cream, etc. After my chopping spree we had quite a collection of tasty chili toppings.

I’m sure my toppings were beyond fabulous however, there was so much food that Brandon practically brought back all the toppings in the same quantity as when he left that morning….

Turns out these so-called “chili toppings” are also very good candidates for chicken quesadillas. Here’s what I used:

  • 2 cans chicken
  • salsa
  • can of black beans
  • can of corn
  • cilantro – chopped
  • green onion – chopped
  • jalapeno – chopped
  • shredded cheddar cheese
  • whole wheat tortilla

First mix the black beans and corn into the salsa. This makes way more than you need for the meal make sure you get some tostitos or something as well.

put the chicken in a bowl and mix it with the salsa mixture and the rest of the ingredients (I didnt measure anything…just make it look good)

After its mixed up soon some on a tortilla and grill it on a skillet.

Put some olive oil in the skillet first…the tortillas brown better with it.

Everything is already cooked, so you’re basically just heating it up. Fold over the tortilla and cook on both sides for 4-5 mins or until its hot and the tortilla is nice and crispy.

This makes about 5 or 6 Quesadillas. Enjoy!
